Advanced glycation end products (AGEs) are a group of compounds formed through a reaction between sugars and proteins or lipids. This process is known as glycation and is part of normal metabolism. When sugars react with proteins or lipids, a series of chemical reactions occur, leading to the formation of AGEs. These reactions involve the binding of sugar molecules to amino acids in proteins or to lipids, resulting in the creation of stable, complex structures. AGEs can accumulate within cells or circulate in the bloodstream and gradually accumulate in tissues over time.

AGEs have been implicated in many age-related complications.
